Sweet N Sour Wings
16 oz can crushed pineapple 1 tablespoon cornstarch 1/3 cup sugar 1/4 cup soy sauce 2 tablespoons white vinegar 1 clove garlic, minced 1/4 teaspoon dried ginger 1/4 teaspoon ground black pepper 20 trimmed and separated wings
Preheat the oven to 350.
In a small saucepan over a high flame, drain the juice from the pineapple can. Reserve the pineapple. Whisk in the cornstarch quickly, before juice gets hot. Add the sugar, soy sauce, vinegar, garlic, ginger, and pepper. Bring the mixture to a bubbling simmer. Add the crushed pineapple and simmer for 2 minutes. Remove from the heat, and let cool for 10 minutes. Transfer to a large bowl.
Add the wings to the pineapple mixture, coating them thoroughly. Spread the wings evenly on a buttered 2 inch deep baking dish. Bake for 20-25 minutes, or until thickly coated, glazed and cooked through. Transfer the wings to a platter garnished with red cocktail cherries.
